  • Strawberry Basil Smoothie

    Ingredients

    • 1 cup frozen strawberries
    • 1/2 cup almond milk
    • 1/2 cup fresh basil
    • 1/2 tbsp honey
    • 3 ice cubes

    Instructions

    Blend everything until smooth. Add water if it needs to be thinner.

  • Vegan Zucchini Bread Muffins

    Ingredients

    • 1 cup shredded zucchini
    • 1 banana
    • 2/3 cup almond milk
    • 2 cups flour
    • 1 tsp cinnamon
    • 1/2 tsp nutmeg
    • 1/2 tsp cloves
    • 1 tsp baking soda
    • 1/2 tsp baking powder
    • 1/4 tsp xanthan gum
    • 1/3 cup coconut sugar

    Instructions

    Peel the zucchini and grate into a large bowl. Add the almond milk, and banana, mashing the banana as you add it. Mix in the dry ingredients except flour and stir briefly. Add the flour in small amounts mixing as you go.

    Pour into a muffin tray.

    Bake at 350°F for 35 minutes or until a knife comes out clean.

    I've been really enjoying the Flash Briefing in the mornings, but I have a request. There are several feeds which don't update as often as others (some update multiple times a day, some every few days). When I'm listening to the news in the morning, it's incredibly frustrating to hear a duplicate of what I heard the previous day. However right now my only option is to tell Alexa to skip that item, or just remove it from the list.

    I would prefer if Alexa could keep track of whether she's already played a particular item, and quietly skip over it if there is nothing new in that particular feed. This would make the experience much better, and I'd be able to add a lot more flash briefing sources without worrying about hearing old content!

    Took my new bike radio rig out for a spin tonight! It's a 40 amp-hour rechargeable battery powering a 50 watt radio in the side bag, connected to a roll-up antenna hanging from the bike flag. The cable runs along the bike frame up the handlebars to the radio faceplate attached to a magnetic phone mount. Was able to check in to the ARES net tonight without any trouble! First time on air with the new radio! #w7apk #hamradio

    What do you do with way too much zucchini? Make zucchini chips! Thinly slice zucchini and top with oil, salt, garlic powder, and cayenne pepper. Bake at 250 degrees for about an hour until they get crispy! #zucchini #cooking #easyrecipes

    Attempting an Instant Pot hot sauce recipe tonight!

    • 2 cups cherry tomatoes
    • 2 carrots
    • 1 small onion
    • 1.5 cups habaneros
    • 4 cloves garlic
    • 1 cup rice vinegar
    • 1 cup water
    • 1/2 cup Mustard
    • 1/2 tsp xanthan gum

    Chop the carrots, onion, garlic and habaneros. They don't have to be super fine. Sauté the onions in the instant pot until translucent. Add everything and set to high pressure for 4 minutes. Let the pressure come down naturally, or you'll get a room full of capsaicin and you will regret it. Blend with an immersion blender.
