  • Ginger Snap Cookie Experiment #5

    Ingredients

    • 3/4 cup butter (at room temperature)
    • 1 1/4 cup coconut sugar
    • 1 egg
    • 2 cups Bob's all purpose gluten free flour
    • 1/2 tsp xanthan gum
    • 1 tsp baking soda
    • 2 tsp vanilla
    • 3 tbsp molasses
    • 1/2 tsp allspice
    • 1 tbsp ginger powder
    • 1 tsp cloves
    • 1 tsp cinnamon
    • 1 tsp nutmeg
    • 1 tbsp milk

    Instructions

    First mix butter and sugar, then add egg and vanilla and mix, then add remaining ingredients and mix until everything is blended.

    Bake at 350 degrees for 12 minutes.

    Notes

    Flattened out just right! They were not too crispy, and had a great texture! These are definitely the best so far!

    I am satisfied with the result, and now I'm going to experiment with variations on this recipe as different flavors of cookies - oatmeal raisin, "chocolate" chip, espresso, suggestions welcome!

  • Ginger Snap Cookie Experiment #4

    Ingredients

    • 1 egg
    • 2 cups Bob's all purpose gluten free flour
    • 1 tsp baking soda
    • 2 tsp vanilla
    • 3 tbsp molasses
    • 1/2 tsp allspice
    • 1 tbsp ginger powder
    • 1 tsp cloves
    • 1 tsp cinnamon
    • 1 tsp nutmeg
    • 1/4 tsp paprika
    • 1 tbsp milk

    Instructions

    First mix butter and sugar, then add egg and vanilla and mix, then add remaining ingredients and mix until everything is blended.

    Bake at 350 degrees for 12 minutes.

    Notes

    These did not flatten out at all. They turned out more "bready" than like cookies. The main difference is the date sugar, which apparently has very different properties than coconut sugar. These were not a hit, and they were not very good at all.

    • 1 tsp baking soda
    • 2 tsp vanilla
    • 3 tbsp molasses
    • 1/2 tsp allspice
    • 1 tbsp ginger powder
    • 1 tsp cloves
    • 1 tsp cinnamon
    • 1 tsp nutmeg
    • 1/4 tsp paprika
    • 1 tbsp milk

    Flattened out nicely! However they are quite dense.
