Tonight's #cookie experiment #1:

• 3/4 cup butter (at room temperature)
• 1 1/4 cup coconut sugar
• 1 egg
• 2 cups whole wheat pastry flour
• 1 tsp baking soda
• 2 tsp vanilla

Didn't flatten out as much as I would have liked. Delicious though!
