    Made a batch of "Sorta Secret Aardvark Sauce" from http://forums.egullet.org/topic/128657-sorta-secret-aardvark-sauce-habenero-hot-sauce/ last week, it came out pretty good! Not quite the same as Secret Aardvark sauce but still tasty. I ended up using only half the amount of rice vinegar, and it definitely did not come out too thick.

    Next time, I want to try it without the curry powder since I think that's what's contributing most to the difference in taste. I also want to add a little citric acid and xanthan gum.

      Aaron Parecki That's usually where the 'secret' hides. I'd love to taste your version and the original Aardvark version side by side.

      There's no curry powder in the original, but there are "spices" listed as the last ingredient.

      I like habenero hot sauce, and I do like Aardvark; but it's not always my favorite habenero sauce; there's a lot of other spices in there when I might prefer to taste the habenero a bit more. You think curry powder or something related in real deal could be accounting for that? Black pepper?
