I wonder what would happen if I set an email auto-responder that instructed people to open an issue on github.com/aaronpk/self instead of send me an email. #email #lifehack

  • Ginger Snap Cookie Experiment #5

    Ingredients

    • 3/4 cup butter (at room temperature)
    • 1 1/4 cup coconut sugar
    • 1 egg
    • 2 cups Bob's all purpose gluten free flour
    • 1/2 tsp xanthan gum
    • 1 tsp baking soda
    • 2 tsp vanilla
    • 3 tbsp molasses
    • 1/2 tsp allspice
    • 1 tbsp ginger powder
    • 1 tsp cloves
    • 1 tsp cinnamon
    • 1 tsp nutmeg
    • 1 tbsp milk

    Instructions

First mix butter and sugar, then add egg and vanilla and mix, then add remaining ingredients and mix until everything is blended.

Bake at 350 degrees for 12 minutes.

    Notes

Flattened out just right! They were not too crispy, and had a great texture! These are definitely the best so far!

I am satisfied with the result, and now I'm going to experiment with variations on this recipe as different flavors of cookies - oatmeal raisin, "chocolate" chip, espresso, suggestions welcome!
