maybe I should just say screw it and get a $10,000 Mac Pro since I'm apparently never leaving this house again

and when I do get back on the road I can remote desktop into it from an iPad or something right? just means no offline development

  You can sorta kinda use @iSH_app and / or @UTMapp from an iPad. Both are a bit slow, but remarkably useful anyway.
