Why do I always feel like fading out a song is cheating?

In my opinion, it is cheating.

So good at it in fact, that they trick your brain into thinking it's a fade-out when it's actually not. *Art*: https://www.youtube.com/watch?v=lTGrv8p6okU

Imo, the fade-out is REALLY hard to do convincingly. A band that always seemed to get it right was BJM: https://www.youtube.com/watch?v=sCLaAmRaXDQ

The danger in fading out a song is making it sound like the song doesn't know where to end (or an ending wasn't written for it)–the art of a fade-out can be as Katy said: it can leave you with the intended feeling still at full force at the end of the song rather than feeling like it was concluded.

IMO it's not cheating per se if you consider music as something that is not a start/end tied up nice thing but more as a piece of a continuing thought or feeling
